Well I am officially sick. I had a midterm today and did not feel up to it. I went to Walmart to buy some last minute Thanksgiving stuff. I plan on making some homemade pies for it. I also tried one of these...

Happy Transgiving!!

I had a good day today! We celebrated Thanksgiving early with our own spin on it called "Transgiving." There was a lot of food and lots of good convo. We took the pumpkin empanadas we made yesterday and they were a hit! We got a request already to make them another time. Hmm...I will think about it.

The party was at a  studio condo that used to be a mattress factory. How cool is that? The bathroom door is an old elevator/elevator door...it was neat!

Pumpkin Empanada Day with some Mimosas

This weekend has been very busy! It has been funfilled and very eventful. Yesterday started off with going to see a Christmas tree lighting in downtown and to go eat some thai food.

We had some fried wontons and I chose to get some Green Curry. It was very spicy and delish!
After we went to dinner we went to buy the stuff for the empanadas and then went to see Harry Potter....

 Earlier today I went to my friend Rosa's son's birthday party...it was a blast!

Today we set out on a mission to make some pumpkin empanadas. I used Libby's canned pumpkin (the best).

 We drank mimosas while we were making them...yay!

 And ate some sloppy joes because we got hungry!

Great Day in the Neighborhood

Well today was a super busy day....lots of paperwork and homework...
I got a lot done though and am definitely ready for the weekend. Tomorrow I will be going to the lighting of the Christmas tree downtown and to eat some delish Thai food. I am excited. Saturday will be also fun filled with my good friend's son's birthday, going to watch Harry Potter, and making some homemade Pumpkin Empanadas. Wow....busy. I will be sure to take some pics...Yesterday I went to my friend Rosa's and she made some yummy cookies which are the equilvalent to Mexican Biscochitos. I will be looking for them when I go grocery shopping tomorrow....

Today had some good eats. I was not able to take pics at work but we had a delicious lunch which consisted of crab legs, crab cakes, and mahi mahi tacos.

Dinner was also good....

I ate some lentil soup, ceasar salad and finished it off with some Cookie Dough ice cream.

Good Day with the hubs

We had a great day together....ran lots of errands/fun time together, spending the day off together.
We started at the mall, where we went to numerous stores shopping for the hubs. I also got my flat tire fixed....had a nail in it...sucks! At least I did not need a new one! We found a few great pants for him to take on his trip to visit his fam. I was looking forward to getting new stuff at Bath and Body Works.........this is what i got....

Back From Tampa

Hey everyone!

     Well it has been a while since I have posted...I am officially back from Tampa. Unfortunately, I did not have internet for most of the trip. I did however, meet some new friends, try new food, and also did some work in the process.

Here are some yummy drinks I tried while I was there...

An Arnie Palmer which is Sweet Tea vodka and some fresh lemonade....it was delish!

I also tried this Belgian White beer...it had a different kind of sweet potato taste to it. It was perfect for this time of year.


When I got back today, my husband and I decided to have lunch at this Caribbean restaurant called, "Bimini Bobs." I would definitely recommend it to anyone.

We started out with some Conch fritters which were warm and chewy.

I decided to get the grilled tuna with mango salsa topping, with some okra and tomatoes, and their special coconut rice with their seasoned black beans. It was so good but I could not finish it all...

Busy Day at Work

Well Tampa has been great, but I have not been able to enjoy it as much as I would like. I still have not been able to go to Busch Gardens.... hopefully I will get to today. Not much has been going on on the home front but I have been doing homework on my free time. I am taking Statistics right now which is not very fun...blah. Well I will try to post some pics later if I get a chance. Ciao!

A Whole Lotta Tampa

Well today was "D" day for traveling to Tampa. I spent most of my day ( which I did not take pics of..shame on me) traveling to Tampa for business. I had a great morning having a delish breakfast of Boudin bakery sourdough bread with butter, homemade hashbrowns, 2 organic eggs, and some turkey bacon for breakfast. It was sooooo good....plus I had some brand new makeup items for her to choose from that made it just like Christmas. Unfortunately, I do not have any recollections of this shananigan...boo!Well,
My best friend Tinia is working on her portfolio and I thought that I would give her a honorable mention since I was her PIN and we have been talking about this photo op for months and I do mean months....

  This picture was in the months of planning and it is was a lil sneaky sneaky...more details later....

But now I am officially in Tampa on business and hopefully I will get to go to Busch Gardens manana.....

Baby Shower Fun

Today was a blasty. I went to my good friends house for a baby shower/mimosa day. It was a co-ed party and was lots of fun. My friend will be having her lil baby boy next month.

The men played a game where they had to put a diaper on the father to be.....

 It was hilarious!
