No Power?

I had a great day today! It was good for a Monday. I got a Starbucks Iced Americano to start off my day.. Then I did a fabulous 4 miles of speed interval training on the treadmill. I really felt the burn! I also really enjoyed my lunch.  I admit that I did not eat your conventional lunch. Instead I went for this:

I loved it so much the other day I decided to eat some for lunch with lots of berries. I got a smaller portion of yogurt and went for some antioxidant action. Don’t judge me! Angel


After work I studied for my mini exam in Biology 2 and did a quick weight sesh. I worked on back, chest, and shoulders. Boy am I sore from doing legs and cardio yesterday! Well I ate at work for dinner  ( a piece of pizza my friend Jana brought me) and headed to class. When I got there, I noticed that the parking lot seemed a lil empty and for some reason it seemed a lil darker. I thought it was just because I showed up to class about 25 min early to get a good seat and review stuff before the test. Well, I got out of my car and headed to class. There was a sign stating that class was cancelled. Me being the skeptic and knowing how my teacher is very punctual and does not cancel class for anything, I waited for a few minutes. While waiting I decided to pass time with my IPhone. When I was checking my mail, I noticed all these school “alerts” telling us about a power outage at the school and there was even an email from the teacher. The reason I did not get this memo was because I was working out and my phone was on silent. Hmm. So I did what any regular person would do…. I went to Target and got a bottle of wine and a new shirt to work out in. I then went home and did this:

I have never watched The Bachelor, but this season has got me tuned in. I like Emily and am not liking Michelle at all. It turned out to be a fantastic night!

It was definitely good and I had two cups. Well off to bed…got a long day manana to include getting my hair done. Yay! Night!

Just Chill

Well this weekend was good! I had a fabulous breakfast yesterday and tried Giada DeLaurentiis’s Mozzarella, Raspberry, and Brown Sugar Panini after seeing it on Carrots and Cake’s blog. And I have to say it was good! I went to my friend’s house that night for an impromptu gathering. I decided to take these paninis and cut them down to four squares for an appetizer. They were a hit!

Today was full of studying and relaxing. It was such a beautiful day today that I wanted to get out of the house. I called my friend Rosa and we decided to try the new froyo place Chill. It opened about a month ago and I have been wanting to go there. They have 40+ flavors and 50+ toppings for your froyo.

I went with the New York Cheesecake froyo with strawberries, raspberries, and yogurt chips. It was yummy! I will be going her again…Maybe at my lunch hour? Flirt male


After going to get some froyo we went Baby Shower shopping at Bed Bath and Beyond, Michaels, and we side tracked to Pier 1 where I got some adorable measuring spoons!

When I got home I spent some time with the hubs and watched a very interesting movie…it is called Food Matters. I have never heard of it. I have heard of Food Inc. but this goes into pharmaceutical meds and also eating raw and etc. My husband and I really enjoyed it. It makes you think!

To Aspartame or not?

Hey everyone! Hope your Thursday went well! My day went by fast. Today is my "Friday" since I have to work this Sunday. I had an awesome workout today. I did weights for 25 min, elliptical for 30, and stationary bike for 30. I have been pretty good about eating healthy and exercising daily.

Talking about health brings up a good point, to aspartame or not? My friend Jana from Married to a Bevill brought up a very interesting subject. We were talking about healthy eating and babies ( since she is pregnant) and she told me about the side side effects of aspartame. I knew that it wasn't completely "good" for you but didn't know how "bad" it was. Well I looked online and found this . It showed how aspartame causes and contributes to a lot of diseases. It is pretty scary stuff. Tomorrow my goal is to rid my house of all things aspartame.

On a lighter note my sister sent me a pic of my nephew. He is the cutest!

Happy Hump Day!

I am so glad that it is almost weekend. Tomorrow is my Friday since I will be working this weekend. I had a great day.

For breakfast I had Bob’s Red Mill Thick rolled oats with Barney’s butter, organic skim milk and half a banana.

I went to eat Panera Bread for lunch and I made a delicious meal of chicken, asparagus, and brown rice with monterey jack cheese and broccoli cheese sauce for dinner. The rice has a risotto consistency. It came out delicious!

I was able to run 3.5 miles without pain! I am so happy! I have been having IT band pain for a few weeks now. I have been doing the foam roller exercises and also the Walt Reynold's ITB special. They have been helping.  I feel better. I hope that this resolves before my half next month. Well I have a long late day at work tomorrow. Good night!

Done with Painting House!

Had a great day! Ate some steel cut oats for breakfast and went to eat some delicious sushi for lunch. I also have some good news for you guys! We are finally done painting the house. It looks so different. The old paint was hideous.

I also made a super yummy dinner that I got from the “Best of Clean Eating Magazine” cookbook:

I made the Flank Steak roll with Spinach and Garlic. I could not find flank steak anywhere so I improvised with top round steak. It was easy and quick to make. Only took about 30 min. I made a side salad with my homemade balsamic vinaigrette to accompany it.

It came out good. The pine nuts and red wine vinegar added a burst of flavor! I would recommend this recipe.


I also worked on homework and participated on my first ever Fitblog Live chat. It was very interesting. I met some new and interesting people and learned some new facts on health and fitness. Life After Bagels was the moderator and put out a message on twitter for the invite. I will definitely be doing this again. It was fun and I got a lil taste of blogger networking.

First Day of Biology 2

Hi everyone! Hope your Monday was good! I had a great day. I started off with a delicious breakfast of muesli and thick rolled oats with blackberries, almond milk, and a bit of organic skim milk.

I had a good cardio sesh with 30 min on the elliptical doing intervals and 30 min of weights.  For lunch I had leftover Ribeye and Caprese salad with arugula.


Before heading to my class I ate Tropical Smoothie for dinner. I decided to try something new and went with a Wasabi Roast Beef sandwich. I would recommend this sandwich it was mouthwatering good!

I am still on this organization kick and decided to get the top of our fridge in our pantry/laundry room a bit more organized. it is not done…I need to move some stuff around but here is some progress…

First Day Off the Detox

Well today I am officially done with my 21 Clean Program detox. All in all it was not that bad. I truly enjoy smoothies and I love fruit and chicken so it was actually enjoyable. I feel like I have more energy and my skin cleared up. I also don’t feel as tired anymore. I did miss oatmeal, cheese, and eggs. It did make me realize that I have to incorporate more fruit and veggies in my life. I also learned from watching Dr. Oz: 28 Days to Prevent a Heart Attack the other day that I should be making the meat the side dish.  I will keep that in mind. I did also lose 12.5 lbs while on the detox. I did not do this detox to solely lose weight but to do a beginning of the year cleansing. I am going to try to do this every new year. Lets see how that will turn out. 

The bread that I made yesterday turned out ammmmmmmmaaaaaaaaazzzzzzzing! It was so good. I don’t know if I will ever buy any store bought bread anymore. It doesn’t compare.


For lunch I decided to make a panini with the homemade bread. It was yummy!

Here is what the sandwich contained:

  • Kumato Tomato
  • 1/3 avocado
  • Chipotle mustard
  • Arugula
  • Boars Head Everroast Chicken meat
  • Boars Head Creamy Havarti with jalapeno

For a mid afternoon snack I made some kale chips.

Here is how to make them:

  1. Pre-heat oven to 350 degrees
  2. Wash the kale very good and dry with a salad spinner (opt for organic if possible)
  3. Put on parchment paper
  4. Drizzle or spray with olive oil
  5. Put some salt to taste
  6. Bake for 15 min or until leave are crispy but not brown

Voila! You made some kale chips!

I bought this wine at the Fresh Market. It was a recommendation from the wine guy at the store. It was given a 91 point score. So I decided to go with it and give it a try….

For dinner I made a Caprese salad with some homemade balsamic vinaigrette, fresh mozzarella, and kumato tomatoes on top of arugula. I also had a small piece of rib eye and a glass of wine. It was a good pairing.

Today I spent some time studying for my Biology class and upcoming SAT test. I also got into a kitchen organization kick after watching KERF’s post. It was really a motivator.

I got rid of old tupperware that was worn out or crappy.

I went through everything to make sure it was not expired. We went through it a few weeks ago but there were thing that were expiring this month. I also threw some old open stuff away.

I got rid of old knives in this drawer.

This afternoon I ran 3 miles. My knee has been killing me and I am getting worried since I will be running the Disney Princess Half marathon next month. I found out that it is my IT band and am gonna try am exercise called Walt Reynold's ITB special and I will also be using the handy dandy foam roller. We will see how this goes.
